Some Cold-Weather Holiday Food
Dec. 21st, 2025 10:04 pmActual scientific work is definitely slowing down around here as the holidays approach. As I often do, I wanted to (re)post some recipes of foods that go well with the season (or perhaps with cold weather in general). I've rounded up a few new photos of the results as well! All of these are synthesized regularly here at Pipeline HQ, and I can personally vouch for all of them after long experience. If you'd like to see the whole range of recipes posted here over the years, this page (and the ones following it) should bring them up!

First off, some desserts. I think the first recipe I posted here (some years ago!) was for chocolate pecan pie, and I still get emails about it. Here's a canonical version, and the result of this year's repeat is shown at left. This one got a bit dark on the top, but it was (like all the others) consumed vigorously. In recent years I've added the recipe for cranberry-lime pie, also shown at right, which has a pH-driven color shift midway through the preparation. The chocolate pecan pie accomplishes many things, but it does not change color.
I have also made a batch of these gingersnaps, which get takers both in the earlier soft-cookie part of their lifespan and in the "snappier" phase later on. That's a shot of today's batch, actually.
This next recipe may not sound so much like cold-weather food, because it depends on summer blackberries. But the great thing about cobblers is that they work identically with fresh or with frozen berries, and I have a weighed one-cobbler-quantity bag of blackberries that my wife and I picked last September waiting for the right moment. A commercial bag of them will do the trick, too, and is a lot better than going without blackberry cobbler at all. A batch with biscuit-style topping is shown at right.
If you're not put off by the idea of a more summery dessert in December (apologies to the Southern Hemisphere folks; you're ready to roll by now!) then you could also try the key lime pie, or even the lime sorbet. I'm not quite ready for that second one myself this time of the year, but the only lime sorbet I've had that competes with it is from Berthillon in Paris (no worries, they have me beaten on everything else!) If it's your sort of thing you have to give it a try at some point, because it's unstoppable.
Now to some good stuff to eat before you get to the desserts! A classic dish for cold temperatures is French onion soup, and that recipe is my take on it. A recent effort is shown at left. As many of you no doubt already realize, a lot of online recipes grievously misstate the amount of time that it takes the caramelize the onions for this one. Now, this is not an all-day lashed-to-the-stove job, but neither will it be done in the breezy ten or fifteen minutes that some people insist is enough. But if you have some beef stock and chicken stock (or can buy some!) that is really the only labor-intensive part of the whole thing.
Another good cold-weather dish is chicken paprikash, and that recipe makes appearances around here in the wintertime. With noodles and some sour cream, it's pretty hearty stuff. Similarly robust is this chicken pot pie, shown at right, which differs from its commercial counterparts in many ways, the first being that it contains no potatoes whatsoever.
Staying with the chicken theme, we made a batch of this chicken-noodle-and-corn soup here just the other night, and I've been making it for over thirty years and can testify to its healing powers. The original recipe, being Pennsylvania Dutch, has saffron in it, but in our household saffron is reserved for the Iranian side of the menu (!) So if you try it that way, let me know.
Here's a beef dish that takes a bit of preparation, but odds are you've never had it before, since it's mostly seen in Germany and adjacent areas: rindsrouladen. This one I haven't made in a while, but it always reminds me of my father's cooking, since he made once in a while while my brother and I were growing up. During my post-doc in Germany I ordered it and found that the local version was identical in all ways with his preparation, which I was glad to report back to him!
Here's a side dish that (since I'm from Arkansas) I consider to go with most anything: cornbread (show at left, in a prep from the extensive Pipeline kitchens). You can (as the recipe indicates) add corn kernals, chopped onion, diced green chiles, cheese, or all sorts of other stuff to take it in a savory direction. Or you can make it plain and have it with whatever jam or preserves you wish! This is a Southern-style cornbread, that is to say Not Sweet And Cakey, so if you want sweetness you'll have to bring it along yourself at serving time.
OK, that should be enough to get us all through a few days, at least. I'll be pretty quiet here this week, but blogging intermittently until the beginning of 2026. I'd like to wish everyone a happy and healthy holiday season, whichever ones you might celebrate. And if your celebration just includes whipping up some good food and having some people sit down and eat it with you, then consider yourself fortunate and enjoy. That's what I do, and I try never to forget the "fortunate" part.

Dec. 26th, 2025 07:05 pmEnd-of-year-ish questions from the NYT
Dec. 26th, 2025 02:18 pmProbably when I was in Cedar Point with the bug, nothing much on my mind besides which roller coasters were open. There were some good day trips this summer, too. And Christmas. And laughing over nothing with my squirrel. Basically having semi-structured but open-ended fun with in groups of 2 or 3 people.
What gave you energy -- and what drained it?
Backbend lessons, and also handstand lessons with Tiny Person.
As for draining, can anything really beat promo discussions at Zillian? And the miserable dragged-out countdown to quitting? I think not. Oh wait, except for watching that orange fuckface take office again and immediately set to work doing terrible things.
What seemed impossible -- but you did it anyway?
Successfully argued for two L6 promotions on my way out the door of Zillian, even though I should have been a lame duck.
What habit, if you did it more consistently, would have a positive effect on your life?
There are probably a few of these. The big thing I'm aware of falling down on is... email. Haha. Personal email used to be the easy one, compared to work email, but now that I don't have scheduled time to just be on computers I haven't been regularly sweeping through my stars there, either. If I don't get better at it soon, I'm going to have to start putting it on my calendar as a task.
What did you try to control that was actually outside your control?
The purchasing schedule for the condo I bought. I suppose that when renters show up (and actually sign their lease) is outside my control, as well.
Is there anyone you need to forgive in 2026?
Nah, fam. My grudge list is sleek, aerodynamic and fine-tuned.

Dec. 26th, 2025 11:00 pmUp, my wife to the making of Christmas pies all day, being now pretty well again, and I abroad to several places about some businesses, among others bought a bake-pan in Newgate Market, and sent it home, it cost me 16s. So to Dr. Williams, but he is out of town, then to the Wardrobe. Hither come Mr. Battersby; and we falling into a discourse of a new book of drollery in verse called Hudebras, I would needs go find it out, and met with it at the Temple: cost me 2s. 6d. But when I came to read it, it is so silly an abuse of the Presbyter Knight going to the warrs, that I am ashamed of it; and by and by meeting at Mr. Townsend’s at dinner, I sold it to him for 18d. Here we dined with many tradesmen that belong to the Wardrobe, but I was weary soon of their company, and broke up dinner as soon as I could, and away, with the greatest reluctancy and dispute (two or three times my reason stopping my sense and I would go back again) within myself, to the Duke’s house and saw “The Villaine,” which I ought not to do without my wife, but that my time is now out that I did undertake it for. But, Lord! to consider how my natural desire is to pleasure, which God be praised that he has given me the power by my late oaths to curb so well as I have done, and will do again after two or three plays more. Here I was better pleased with the play than I was at first, understanding the design better than I did. Here I saw Gosnell and her sister at a distance, and could have found it in my heart to have accosted them, but thought not prudent. But I watched their going out and found that they came, she, her sister and another woman, alone, without any man, and did go over the fields a foot. I find that I have an inclination to have her come again, though it is most against my interest either of profit or content of mind, other than for their singing.
Home on foot, in my way calling at Mr. Rawlinson’s and drinking only a cup of ale there. He tells me my uncle has ended his purchase, which cost him 4,500l., and how my uncle do express his trouble that he has with his wife’s relations, but I understand his great intentions are for the Wights that hang upon him and by whose advice this estate is bought. Thence home, and found my wife busy among her pies, but angry for some saucy words that her mayde Jane has given her, which I will not allow of, and therefore will give her warning to be gone. As also we are both displeased for some slight words that Sarah, now at Sir W. Pen’s, hath spoke of us, but it is no matter. We shall endeavour to joyne the lion’s skin to the fox’s tail.
So to my office alone a while, and then home to my study and supper and bed. Being also vexed at my boy for his staying playing abroad when he is sent of errands, so that I have sent him to-night to see whether their country carrier be in town or no, for I am resolved to keep him no more.
Paperwork
Dec. 26th, 2025 01:17 pm10 minutes ago it was dark and pouring rain so hard we couldn't see the nearby hills. Heck, even the other side of the circle, 125 feet away was a bit misty. Now the sun is shining. Apparently we will have a few dry days before the next storm moves in which will be nice.
Edit: the above was written a couple of hours ago. It has been a beautiful day since then.
We went down the hill to town for a few minutes, mailed my letters and got some food. On the way down I touched up the road a bit more. Mostly things are looking very good and no flooding. My clearing out of the culvert area has worked very well, water is barreling through, and I hope it is carving the channel on the downhill side out a bit. Lots of robins chattering away in the tall trees down around the culvert. A red shouldered hawk is hanging out near the house. Dark Eyed Junco's are sitting on my amaranth plants eating the seeds.
The greenhouse has a small window in the roof. It is perfect for getting airflow moving through when it is warm or hot. The kit comes with an automatic opener/closer which I did not install because it gets both too hot and too cold here for it to work. In our high winds the last few days that little window blew off. Yesterday I was able to get it back in place and install a hook so it couldn't open. The wood on the hinge is still broken, but it is doing a good job of keeping in the heat.
M just brought me a little bowl with pieces of Lively pepper that we picked from the garden yesterday. It is really good. I have no idea how those pepper plants have survived.

Dec. 26th, 2025 07:10 pmAnd I probably should have anticipated this given that I picked the movies, but despite all the movies involving Christmas to some extent (my rule was pretty much, does the movie take place over Christmas, if yes then it counts – sure yeah Die Hard would be a Christmas movie but I’ve seen it so), this gave us a pretty broad swath of genres, a lot of festive family-friendly fare but also like, noir! War drama! Black comedy! French New Wave! It did make me want to try to come up with more movie marathons with some theme that can work through many different kinds of movies.
I’ve logged these on letterboxd, but in any case, here are briefly 24 Christmas movies I hadn’t seen before:
( White Reindeer (2013) )
( Gremlins (1984) )
( Single All the Way (2021) )
( The Lion in Winter (1968) )
( Miracle on 34th Street (1947) )
( The Apartment (1960) )
( Tangerine (2015) )
( Ma nuit chez Maud | My Night at Maud’s (1969) )
( Jingle Jangle: A Christmas Journey (2020) )
( Let It Snow (2019) )
( Lady in the Lake (1946) )
( 醜聞 | Scandal (1950) )
( Joyeux Noel (2005) )
( Klaus (2019) )
( 東京ゴッドファーザーズ | Tokyo Godfathers (2003) )
( 8-Bit Christmas (2021) )
( Batman Returns (1992) )
( Little Women (1994) )
( Feast of the Seven Fishes (2019) )
( The Shop Around the Corner (1940) )
( Kiss Kiss Bang Bang (2005) )
( The Thin Man (1934) )
( Happy Christmas (2014) )
( Meet Me in St. Louise (1944) )
